Raw Brownie Treats

As the New Years Resolutions kick into gear we thought we share a recipe that we stumbled across a few months ago on www.therawtarian.com - This Raw Brownie Recipe is low in Calories, Carbohydrates & Sodium as well as low in fat. The ideal treat to keep you on track with your new years goals while treating yourself at the same time.

Remember everything in Moderation. We trust you will enjoy these as much as we do!

 

INGREDIENTS:

BROWNIE:

1 Cup Pecans / Walnuts

1 Cup Dates

5 tablespoons raw cacao powder

4 tablespoons shredded unsweetened coconut

2 tablespoons honey

1/4 teaspoon sea salt

ICING:

1 Cup Dates

1/4 Cup Raw Cacao Powder

1/4 Cup Coconut Oil

3/4 Water (or a tiny bit more if needed)

METHOD:

  • Place Pecans / Walnuts in your food processor and process until they become small and crumbly.
  • Add dates to the raw brownie recipe and process again until the mixture sticks together and the dates are well processed.
  • Add the remaining ingredients and process again until the mixture turns a lovely dark chocolatey brown. 
  • Press the mixture into a brownie dish or we have used a small muffin tin
  • Refrigerate for a couple of hours - Brownies will last in the fridge for up to 5 days.

ICING:

  • Place all ingredients in a high speed blender. If possible let them sit in there a few minutes to soften the dates.
  • Blend all ingredients. Start at a slow speed and increase slowly.
  • Keep blending until ingredients form a velvety consistency
  • Place Icing onto Brownie bases and refridgerate

You may top your brownies with fresh fruit such as strawberries, blueberries or raspberries.
